Iron oat pancake strips
Soft, hold-able pancake strips built for little hands — iron-rich oats paired with vitamin-C berries so more of that iron actually gets absorbed.
Ingredients
- Ripe banana1 small (~90 g)
- Iron-fortified baby oats30 g
- Egg (or 7 g ground flax + 45 ml water)1
- Soft berries (blueberries or raspberries), mashed30 g
Method
- Blend the baby oats into a fine, smooth flour so the batter stays gentle on little tummies. 20 Sek. / Stufe 10
- Add the banana, the egg (or the flax soaked in water) and the mashed berries. Mix to a thick, spoonable batter, scraping down the sides once. 20 Sek. / Stufe 5
- Now to the hob — the Thermomix has no fry function, so this step is stovetop. Warm a lightly oiled non-stick pan on medium-low and spoon the batter into finger-length strips (about the length of an adult finger).
- Cook until set and lightly golden underneath, about 3–4 minutes, then flip and cook the other side until cooked all the way through, about 3–4 minutes more.
- Lift onto a plate and let them cool until just warm. Do the squish-test on every strip, then serve to your seated, supervised baby.
Safe self-feeding shape. Cut or shape the strips to about the length of an adult finger — an easy hold for little hands. Squish-test every piece before serving: it should squash easily between your finger and thumb. Always stay close and keep baby seated upright while eating.
Allergen note: egg. This recipe contains egg. If it is a new food for your baby, offer it on its own first and watch for any reaction over about three days before combining it with other new things. Prefer to skip egg? Swap in 7 g ground flax soaked in 45 ml water for an egg-free strip.
Why berries? No added sugar or salt here — the ripe banana does the sweetening. The berries bring vitamin C, which helps your baby absorb more of the iron from the oats.
Storage & freezing. Best enjoyed fresh. They keep for 24 hours in the fridge, or freeze the cooked strips for up to about 1 month. Defrost in the fridge, reheat until piping hot all the way through, then let them cool to just-warm before serving.
